I've heard people put urchins in their refugium to eat dead macro - which ones? Do any stars do this as well? Who should I toss is there? Currently using Chaeto

I would put the Urchin, namely, Long Spine Diadema in your main tank. However, I would add one IF your tank is a mature one.
Sea Stars in a refugium? I would add a Brittle or Serpent Star to help as part of your clean up crew. Standard hermits, snails and various other hardy and beneficial animals to aid in detritus and algae control are a plus.

Are you exporting macro for nutrient reduction? If the macro dies, then it releases the nutrients back into the water and defeats the purpose.

I would not worry about if it dies then. Just do your best to export in a timely manner. If you miss some and it dies back, then the new growth will take the nutrients back up. I don't think many things eat dying/dead macro anyway. Better to have something eating the growing macro. I think people usually harvest it and feed it to the display if they have herbivores.
