So I've seen those brick looking things you put in your sump that are supposed to be really porous and help if you have really high nitrates. Or is that just any bio product you put in your sump?

I'm using the rest of my API quick quick start but I think I've gotten better results with Dr. TimsPretty much any biological filtration product will help with that as long as it has allot of surface area for bacteria to grow.
You could use live rock if you wanted. There's no real need to go buy a certain media for this type of application.
The most important party is making sure you have the biological load in the tank to support good bacteria growth through the media or rock
