So I've seen those brick looking things you put in your sump that are supposed to be really porous and help if you have really high nitrates. Or is that just any bio product you put in your sump?
 
Pretty much any biological filtration product will help with that as long as it has allot of surface area for bacteria to grow.

You could use live rock if you wanted. There's no real need to go buy a certain media for this type of application.

The most important party is making sure you have the biological load in the tank to support good bacteria growth through the media or rock

I'm using the rest of my API quick quick start but I think I've gotten better results with Dr. Tims
 
The various types of ‘rocks’ like Marine Pure, Seachem Matrix, Brightwell NO3 bricks, basically all do the same thing and are designed to aid the biological filtration (primarily nitrate removal) from your tank. Most relay on anaerobic denitrification as the prime method, but it depends on flow etc.

They have tiny holes for the bacteria to populate

They do the same job as live rock but can be used in the sump so their not in the display.

If your nitrates are ‘really high’ you may be best starting with water changes to bring them down as well as increasing your biological filtration methods.

You could also look into carbon dosing (Nopox for example) which is a another method and can be used at the same time.
