Trying to set my Jager but when I set it to 78 on the dial the tank was heated past 78.0 so I lowered the temp till the light would turn off cause the tank was in the perfect temperature. Light turned off when dial was on 73 but now the tank temp dropped to 77.6 and the light won't come back on. So hard configuring this thing. Anyone got any tips or tricks to get this down exactly?

Thermostats on heaters are notoriously off so you have to use trial and error.

Fastest way I found to calibrate is with a tub of water with enough volume to fully submerge the heater. The smaller volume will heat and cool faster making it easier to dial. Once heats the tub to the temp you want unplug it to cool off to room temperature then move to the display.

I am currently testing 2 Jagers in 5 gal buckets. Unfortunately, they are not very precise. With the thermostat set, the water temp will often fluctuate 3 degrees in just one hour. The manual says they hold temp within 2 degrees. I’m planning to get a controller for these.

I used Jagers for years as I found them the most accurate until a couple of years back when, like you, noticed big swings in temperature. Not sure if they changed some thing in their manufacturing but I came across the BRS video testing all the well knwon heaters. In the video, it is quite shocking how bad all these heaters are but they found the Cobalt heaters (sold here in the UK as Aquael) as unbelievable accurate. I brought one and found the same thing. My heat changes just 0.1c per day!!!!
I know this does not help you but thought the above may help show you are not alone with this issue. So much for German engineering!!!!!

Here is how shifty my Jager 50 Watt is in a 5 gallon bucket, sometimes 3 degrees in one hour. I bought these Jagers because people rave over them. However, 3 Finnex HMO digital heaters I have running, maintain temp less than 0.5 degree.

which controller would you recommend, im having trouble calibrate im pretty disappointed since many rave about them as mentioned before
 
I set mine at about 81 degrees and then set my Apex to turn it off if the temp is above 79°. This usually results in less than a 1° swing.
 
Contact Eheim, see what they say. These have a 3 yr warranty so if you got one that's wonky maybe they will send you a new one. They have replaced one for me before

I recommend the inkbird temp controller. They are only $35 on Amazon. It has a heater outlet and a cooling outlet that you can hook up a fan. You can set it up in F or Celsius. I use Celsius so I can adjust the temperature in 0.5 degree increments.

I paint the probe with silicone before putting in the tank to eliminate chance of rust.
