Peppermint shrimp missing legs!

I've attached a few images of the one peppermint shrimp. There is another one in the tank as well. I also have a pistol shrimp.
I noticed the other day that his legs were missing on the one side. What could have happened? Could the pistol shrimp have cut them off (you can see the pistol shrimp in the one picture-he is rather big)? Silly question, but can they grow back?

Happens with aggression, predator and even water flow
Molting as mentioned restores new shell, antennas and legs and even broken claws on shrimp
