If I get a 55 gallon drum to store my ro water in how long could it be kept in there? How would I clean the barrel before using? just trying to figure out ways to have more on demand water stead of taking forever to fill up 5 gallon jugs

If it is a food safe container with lid, you can store RODI indefinately.

How to clean depends on what was in it before.
 
I use 50gal pickled barrels. When I got them I rinsed thoroughly sprayed with bleached rinsed again and then used one gallon of pure bleach and filled rest up with water. Cover let sit for three to four days. Did a heavy rinse filled with water again added the correct amount of ph and let sit another couple of days to pull the bleach out. Rises and was good. Still have a bit of a pickle smell but all works out perfect. Hope that helps

Would that process need to be done with any used food grade barrels or just certain ones like what yours was used for?

I would personally say yes. Especially if they are used. You want to try and pull out as much debris in the barrel as you can so you don’t contaminate your ro.
 
I bought a 27g plastic tub 2 use and it has worked really well for me
I use one of those to mix my water into. I want something bigger than that considering there are a total of 3 tanks in my house. But my saltwater is the one that gets the most attention
