My sump is built for a single 7" Seachem filter sock. Should I opt for the finer version or have both on hand?

Try both. I use both. Whichever are clean get used. The 200s will get very nasty by the time they overflow, but not clog as fast. I really can't notice a difference in water clarity between the two.

Depends on how often you want to swap them out. I have used both and don't really see a difference in clarity.

But in reality you shouldn't leave a sock in till it gets clogged as they become baskets of waste that rot the longer they are in the tank and not cleaned.
