Decided to pick up a 125G tank after having the 75G for a month or so, it just looks much better. Just looking for some input as to how I should go about doing the plumbing for the tank into the sump.

Planned on drilling 2 holes at the back of the tank (one on each end) and having a simple 1" drain and 1" return. Would this be sufficient? I've seen tanks with 4 holes in the back with piping and just not sure if I should do something like that or keep it simple, any recommendations would be appreciated.

Since you're going to drill the tank. I'd recommend you add an overflow box for your drain (at least 2 (1")). A simple pvc pipe is going to be noisy and not enough surface skimming. IMO, Put extra effort and a bit of $ and do it right the first time and you won't regret later on.
You can do a center overflow or dual corner overflow.

Well I wouldn’t do a straight hole for the drain, I was planning to drill the hole and have a 90 degree elbow facing upwards inside the tank with like a stockman standpipe setup to prevent noise.

I seen a thread on the above and I recalled it being noisy.
Looks good but not really good design. If it clogged for some reason, your tank will overflow. If you still insist in using it, I suggest you incorporate in at least an emergency drain just in case.
