I just want to know how much fish i can put in a 210 that is 72x24x30. I want to put at least 3 tangs, a copperband, and a foxface and some other more little fish. So how much exactly can i put without it being overstocking?

Really depends on how much work you want to put into the tank.
More fish = more maintenance.
Personally, with the fish you mentioned, I would do another 3 to 5 fish of those sizes and then another handful of smaller guys and call it a day with weekly 10% water changes.

Stocking levels vary from tank to tank because there are so many different factors, amount of live rock, how porous the rock is, flow, skimmer size, sand depth, sump volume, will there be a refugium, feeding schedule, foods offered, feeding habits of the fish, temperature, among others.

Test parameters often and add slowly.

3 tangs, a butterfly, and a foxface should be fine in a 180. I would add the butterfly first. There are a few tangs that I would stay away from, either for size or aggression reasons.

Too big:
Blue regal/pacific blue/hippo tang
Either of the two large sailfin (Desjardin or Philippine)
Any Naso sp.

Too aggressive:
Sohal
Clown

I would get three from different genera. Something like:
Purple
Tomini
Powder brown

or maybe:
yellow
kole
lavender

Lots, and lots, and lots of smaller fishes to look into:
wrasses, hawkfish, damsels (including clowns), dottys, basslets, gobies, blennys, dwarf angels
