4 month cycle

Started fishless cycling in a brute garbage can a month ago. Ammonia and nitrite all spiked and went to zero liked planned. Now the nitrates are up to about 80 ppm. Do I do any water changes now or just let it ride for the remainder until the rock goes into the tank in about another month or 2?

I was told not to change the water unless your ammonia spikes again
 
I test everything religiously one a week and keep a log book of literally everything I will test every other day if problems occur like high ammonia,nitrite ect. Just to monitor
 
Should I keep dosing ammonia thru the cycle until the fish are added?
 
I have seen the video and it indeed a great video. Just missing of couple answers to my questions. My current parameters are ammonia 0, nitrite 0, nitrate 80 ppm. The ammonia did spike after week one, nitrate followed about a week later. I have been adding Dr. Tim's ammonia as specified once a week and the ammonia goes to zero overnight.
