I am new to this hobby, and I am kind of scared to mess with a sump on a base 55g. I also dont want to break the bank. Can 1 or 2 HOBs work to filter a whole 55g?
(I am coming from the freshwater side and that works just fine for me)

It can work but sump gives you a lot more flexibility.

I've been running 2 cheapie HOBs with no issues on a 40 gallon for a little over a year (plus 6+ months with same 2 HOBs on 37 gallon prior to tank transfer).
*low bio load and only easy soft corals,,, but it's working for me

I would say that one is enough, it does very little for a salt tank compared to a fresh tank. Rocks, water and flow are the main filtration (google berlin method). HOB filter will provide mechanical filtration, and also let you run carbon and phosguard.

A HOB skimmer will be good down the road if you want to get into corals.

I have an 120G tank and an HOB. No sump, no skimmer, but I have a FOWLR tank. (FishOnlyWithLiveRock) .
The HOB works very well. I have a Tydell HOB and a power head. IMO that it is better to start slow, and add extra gadgets later.

I think A am going to opt for an HOB skimmer, I want to try some corals.

Aquaclear 50 or 110 paired with a Tunze 9004 skimmer would work well.

Looks like it. Not sure when Fluval bought them though.

I have an aquaclear 70 and a seachem tidal 55 on my 55 gallon. I have 10 fish of different sizes in there and haven’t had any issues.
