Quick summary of everything that I did:

Day 1 Before Dead shrimp was added
PH:8.2
Nitrite,Ammonia: 0
Nitrate: 40

Day 2 (24 hours after shrimp was added)
Ph: 7.4
Ammonia: 8.0
Nitrite: 0
Nitrate: 80
(Shrimp removed)

Day 3 no more shrimp
Ph: 7.8
Ammonia:8.0
Nitrite: 0
Nitrate:80

Day4
Ph: 7.8
Ammonia: 0.50
Nitrite: 0
Nitrate: 160

Day5
PH:7.8
Ammonia,nitrite:0
Nitrate: 160

Day 6:

Before 25% WC
PH: 8.0
Ammonia, nitrite: 0
Nitrate 160
(Just added some matrix after the wc)

After WC (1 hour later)
PH: 8.2
Ammonia,nitrite:0
Nitrate:80

Day 7 today
PH: 8.0
Ammonia,nitrite:0
Nitrate:80
(Just turned on p.skimmer today)


Notes:
Stability was dosed
Filter: Sponge-floss-matrix
Live rocks and sand ( Yes, I just found out that you weren't supposed to add ammonia source anymore)

Anyways my question is, how will I lower my nitrates more? Once I get everything to zero, should I star ghost feeding to ensure that my tank is really already cycled? Any more tips and suggestions?
 
They will come down on their own. That’s part of the cycle.
 
Yup they will come down. I would add more ammonia if I were you to see how quickly it is converting.
