So I've been reefing for years and years and just transferred to a 250G upgrade and will be adding a lot more fish. I'm trying to do things right this time with new fish as opposed to plopping and praying everyone gets along LOL

With that in mind, does anyone use acclimation boxes when adding new fish? It seems like a great way for there to be a barrier while new tankmates get to know each other but I was also wondering if it would stress out fish like an achilles which is on my list who need a lot of room to swim to be happy? I'm looking for the biggest one I can get but wondering what others who've had experience think if it's worth using a box or if it causes potentially more stress for fish or just certain fish?

Well, I am on the beginner side so don't have as much experience as you, but I have used the eshopps tanklimate with all my new fish and love it. Not for long, just so the other fish can meet the new member peacefully. In my experience, they all get curious and as you say can meet them wo harassing them. I returned a cardinal to my LFS after the already existing one was crazy bumping the tanklimate where the new one was, so probably wouldn't have ended well if I had just gone ahead and introduced him directly to the DT. I think the box is large enough for a short term stint. And it doubles as a frag rack too so that's a plus.
