What is the down side of high cal and mag as long as u keep your alk stable?

There is definitely a range of acceptable values, but it is possible to have values far enough outside the range that can cause issues. It also becomes impossible to use any balanced additives, because nothing is balanced. Another interesting side-effect is that if the Mg/Ca are high and the salinity is right, then that means that other elements must be below their natural seawater values. For some people, the lower than normal values for say Sulfur are more concerning. Also having salt params very different than your tank params makes water changes more disruptive.
