Thoughts? Are my nitrates and Calcium levels too high?

Just did a 10% biweekly water change

30 gallon display 5 gallon sump

6 turbos, about 1dz blue hermits, 2 clowns, 1 six line wrasse, a bunch of candy canes, 3 frags of Zoas, some mushrooms and GSP frags

using instant ocean reef crystals

If you checked right after water change, you may have false readings. Allow at least 6-8 hours (I do 12) before checking
Numbers you have are acceptable- just be sure they are true readings
 
If the salt is mixed according to the manufactures specs (time) then depending on your return pump (tank turnover) is how long the new and old take to mix together.
