Am I feeding my eel properly

Hi, I was wondering if I’m feeding my eel correctly. It is a barred moray (echidna polyzona) and is around 6-8 in. I currently feed every other day either scallop, clam, salmon, and human grade shrimp (shrimp seems to be a favorite). I was wondering if this is the right nutrition for the eel. And if anything should be not fed or needs to be added.
I was reading a forum and saw that shrimp can contain thiaminese. I wanted to know if human grade shrimp contains this or if I understood wrong. From what I’ve been reading it is possible but I would like to make sure.

I think the shrimp (family in general) does, but I'm also a bit fuzzy on the issue. The other choices are superior, and if you want to try something new try octopus (chopped, fresh/frozen) or squids (remove the beaks!)

Thanks. I’ll see if I can find some squid or octopus.
 
I just found a thread that was able to answer this. (Or at least the shrimp containing thiaminese).
