I cannot seem to find this online. It’s about 3/4 inch and every time I get close it closes...or does it!?! Seriously my wife thinks I’m losing my mind. I snapped a few photos. I swear whenever I get close something goes inside and it closes. What am I looking at??

Not sure about the top two pics..looks like some kind of mollusc. But the bottom one is aiptasia...kill it

Any recommendations on the best way?

I just got 5x bumblebee snails who seem to be going after pests. Maybe they’ll get it?
 
Not likely. Where there is one there will likely be many more: if not now very soon. Many a thread as to how to deal with them. Sooner much better than later.
 
Absolutely, get rid of the Aptaisia. They seem harmless at first but if you don’t rid it quickly they will reproduce and take over a tank. Do not scrape it or stab it but either isolate that rock and use aptaisia x or get a natural predictor like to filefish peppermint shrimp or copperband that eats them. .

There are several natural predators, DIY options, and branded products to deal with Aiptasia and people have had luck with some of these and have their own preferences. Personally, I recommend F-Aiptasia Killer from @Frank's Tanks.
 
Well I got some Aptasia X from the LFS. Thanks glad I asked!

One point to consider - I encourage you to follow the directions about turning off all pumps and flow in the tank because IME Aiptasia X tends to blow away easily. Good luck!
