First, my live rock is not cured, its aquacultured. My question is, yesterday I tested for ammonia and the level was 0.05 which was down from the day before when it was 1.5. After I tested the water I cleaned off some stuff that had appeared overnight on the rock (the stuff looked like whitish little sheets here and there) I brushed off most of it with a toothbrush. Today when I tested the ammonia it was back up to 1.5. Should I be concerned or is it because I brushed off some dead stuff into the water? I'm planning on a small water change this coming Friday. The tank will be 1 week old.

Take your time. It takes time to cycle and don't sweat the small changes. When things settle down and test zero it's time. A month or longer imo. I know it's hard but you need things to run its course.

using uncured marine live rock means you do the opposite of all common cycling, the opposite.

you fight to keep ammonia down, it can cause a dieoff chain of events that wouldn't otherwise occur, a set of actions is needed. you should change water or avert the ammonia constantly, keep it at zero as you don't need it since the rock has a full complement of bacteria. our cycling thread covers this is good detail:
