Amphipods Taste Nasty?

Fair warning...this isn't really a problem as much as just a curiosity question. Over the past couple of months i have experienced an explosion of Amphipods in my 75g. I don't see them as much during the day, but at night the sand, rocks, and side walls of the aquarium are blanketed in them. From what i've read there isn't really a negative to this, but i was curious why my fish seem so disinterested in them? Every 30 seconds or so one of them will end up in the water column and most of my fish will take them into their mouths and then immediately spit them back out. I bought a canary wrasse thinking he would eat them, but he seems to prefer the copepods (really cool fish btw). I tried a green mandarin and he had no interest in them at all. There are literally millions in my aquarium and none of my fish seem to want to eat them. What's the deal?
 
Skip feeding one day a week. The wrasse should definitely be interested in them.
