A few weeks ago I found a dime in my tank that had been rusted pretty badly so I decided to throw in some cuprisorb preventatively (it was cheaper than an ICP). Is it a good idea to keep this media running to ensure all the nasties are out, or do I risk any harm by removing things that are good and stripping the water of trace elements?

It can remove beneficial metals. However, those can be dosed back in if there is some undesirable metal of level of metals you need to remove.
