Just bought a used Apex. Probes will need to be recalibrated as they are dry now. What solutions will work?

Soak them for 3-4hrs (or longer) in your tank water and then calibrate them and it should be fine. (It takes 3-4hrs to form the hydration layer on the probes, which increases their accuracy and consistency and its why they are often - but not always - shipped wet.)
 
Soak the salinity probe in the tank for a good week, then let it dry for 24 hours to get a proper calibration. Not in the manual but plenty of threads on here that discuss that for a good calibration
 
Also how do I change the account ownership? The previous owner wasn’t sure on how to do it and neither do I.
 
Does the ORP need calibration as well?
No; don't bother. Put it in the tank and ignore it for a week or two. Then you can start paying slight attention to it; but only as a reference against itself. If it looks like it's doing something not-normal, then look for signs of why that might be. Not-normal is defined by what is normal for your tank - not anyone else's.
(Hint: Your tank will be "not-normal" a lot in the first few months.)

Are you looking to factory-reset the Apex? This will wipe everything and restore the Apex head unit (and thus everything connected to it) back to like-new configurations. Then you can follow through the Getting Started Guide and go forward from there. Unless you are buying a complete system (tank, pumps, lights, Apex, etc.) and the original owner is offering to maintain it (is that even a thing?), this is what I would suggest you do. To do this, hold the "reset" button (using a pin or the like) for 20sec (until the lights go to Orange -> Green -> Orange -> Blue).

If you're just looking to "take over" the Apex, then you would have to be added as a user of the unit.
