What I have tried before is have an island like the attached.
Drill the rock with half inch bit
Epoxy pex tubing into it
Have a coupler at the top (like the photo)
Drill another piece of shelve rock using half inch drill bit
Add the shelf to the island so it sits on the coupler
Enjoy
