I've been thinking about changing mine to just a center island that goes from sandbed to about 3" from the top of the water

I do not like your aquascape. The collection of rock on the right looks fantastic because of the large loop as well as the gaps between the rock. This I would keep for sure. The collection of rock on the left is just an ugly pile of rock. The next problem is that the rock clusters are the same size. In a minimalist tank, the right side structure would work best positioned a little more to the left with the left structure considerably smaller.

Your aquascape has a balanced and neutral look to it. You should follow the artistic Rule of Third for a more pleasing look.
 
Yea those are pretty.... I had originally intended to do a two island much like Bart, but I had a substancial amount of rock and could not stop adding..... ended up with an undulating rock wall with lots of caves. Remember though.. Less rockwork means less places for Coral. I laid mine out to maximize coral space if at all possible.
 
I'm completely happy with my aquascaping as of now.The only thing I am about to change is the height of some of my rock work. I have some dry rock that has been curing in a bucket in the garage for about 3 weeks now. I plan on building up the right side of my tank to where it is only a few inches from the top. And with a 27" tall tank, that's going to look sweet! :)

I was just thinking how in this video that you could actually use this type of scape and it be something similar to nature.
