And do they stay white? I know the green ones get pretty big

These stay small. Will prob stay white. There are colored ones as well.

I have a huge population of them. My harlequin shrimp doesn’t eat them, or at least ignores them (I think they’re too small for it).

I haven’t seen them do any harm, and they seem to eat a variety of algae. For the most part mine stay in the rock, and let out their creepy arms.

Micro brittle star. One of the best members of your CUC IMO. TYhey can get to all the nooks and crannies in your rocks and are completely harmless
