Came back from a vacation, 5 days, and my monti is fading/ bleaching. Any ideas?

Low pH, elevated calcium and your salinity has bottomed out. I'd run some manual tests just to verify, but I think adding some saltwater to bring your salinity up to 34-35ppt will fix the salinity and pH. Reduce your calcium dosing a bit and that should help with that.

Salinity reading is always off on my apex. I just manually checked it and it is 1.024.
I will order more ph calibration fluid and check the validity of ph reading

Something went off to make it mad. Alk? That was always a big one keeping montis for me. Hope it comes back!

If all other parameters are in line, the first suspect for faded corals (at least for me), is always low to zero phosphate. With that being said… your ph is extremely low, and your salt should be 35ppt. Bring those numbers up and increase feeding until you are detectable for phosphates on the Hanna ULR, and you will be good to go.
