Basically new to saltwater

As others have said, all rock is dirty. It doesn't stay white.
After people buy the expensive white rock, they stare at it for months waiting for it to grow coraline or a little algae so their snails don't die.. lol.

It's not to say you have to keep that rock if you're uncomfortable with it, but any aged rock is quite valuable.
Only heroic efforts will make a saltwater tank look clean (like it did in the store) after it's been running and has been drained. The trick is to do a respectable job and fill it back up with water so it looks good again!

Glad to be here and finally starting saltwater as a personal hobby!
Right now I just have a pet rock in a tank (sand comes today) but it’s doing ok so that’s cool. Added some ammonia to get the cycle started, once the sand is in, I get more rock next week and the should get rolling from there

You mean the lionfish I had lol?
He was super nice, he ate from my hand and seemed friendly, but I gifted him to someone with a much bigger tank and more experience. I have since torn down that tank and took a box of qtips to it, it’s not clean as a whistle and ready for sand and rock
