Bean Animal question

I recently got a new 180g with a bean animal setup. I’m not sure what the knob is for.... any help is greatly appreciated.

The valve regulates the main drain so it retains a full siphon. Wide open it could act like a "flush" emptying & filling.
 
There should be little arrows on the red wheel. Use a flashlight and look.
 
And also, if I don’t want to hear the gurgling sound in my overflow, should I open the valve more, or less?
 
Depends Is the noise coming from the main drain or the secondary drain?
 
Overflow box noise is generally from the water falling into the box. It can be avoided with a piece of thin plastic formed roughly to the box shape, inserted on an angle towards the inside leaving a small gap directing the flow back to the wall. Valves open by turning to the LEFT. The valve has to be closed enough so the water level stays above the inlet. It will take time to get it right. Make an adjustment & wait, if needed make another one. The closer you get to perfection the more time you wait between adjustments. I start with a wide open valve.
