Best cooking methods? And suggested mini split

Long story short. I live in so cal. Can get up to 100 degrees at times. I'm about to move my tank into the garage which I have remodeled and insulated completely and drywalled. I also insulated the garage door.

So what would yo do to cool the garage. I wanted to use a mini split. But don't know which unit I should use (garage is 20'x20').

Or should I be fine with a fan blowing on the water? Or should I use a chiller. I have two systems. So I would need two chillers. And I hear they use a lot of electricity
 
Sounds like a goot fit for AC....maybe to save up-front costs get a modular unit permanently installed vs HVAC though?

How big a tank are we talking?
 
Either AC or HVAC have the advantage of helping with humidity....so worth the cost. A chiller or fan on the water doesn't help with that.

Whatever you do, use LED's for light. Going sumpless would eliminate a good chunk of power use.
