I had a bonded pair of "fancy" ocellaris from LA, and came home from work today to find that the larger one had gone carpet surfing. I'm totally bummed because I really liked the 2 of them together. Is it possible to add another clownfish to see if the existing one will bond again, or is it just asking for trouble?

You can add another, just get one small so the current male will become female.

Usually is the safest route to go w/ smaller, and best yet to QT the new one, both to observe it for illness, and to give the existing a little time to adjust away from previous mate.

Inch to inch and a quarter max pretty much assures new guy will still be male.
