Why must I be gluten free????!!!!!! WHY??!!!!

I HAVEN'T HAD SOURDOUGH BREAD IN LIKE 14 YEARS.

It looks so good, that gadget looks so easy to make yummy-ness, drooling now....

I used my watch to ping my phone so I could find it. my phone was in my back pocket and every time I turned around to where the ping sound was coming from, it moved the other direction. I did like three circles before I realized what was happening..... this is s true story.

I have seen a lot of things recently about using gluten free flours to make/maintain starters. Not all hope is lost

I don't think you want to use your starter when it is at "peak activity". That is when it has lots of food available and is eating away and producing lots of co2. You want it to be a little hungry so it goes to work right away and works hard for you.
Kind of like how algae eating fish get lazy when you feed them too much.
I use mine after it settles back down but before any hooch forms on top. It should pour out easily but still be stretchy.

I'm still watching this product though, I'm hoping to see beta testing feedback or something. I'd like to see how it works and what functionality it provides. Graphs are fun.

Being able to see the reactions based on the type of flour used, etc. That data is where I'm interested.. Not necessarily in being told "it's ready"

Not sure if I'll dive in for it though.
