I feed massive amounts of food once a day, primarily flake food (better for fish than most people think). It works surprisingly well to keep fish that people claim need multiple feedings nice and fat. My anthias, tangs, and leopard wrasses are porkers. Small multiple feedings works well also, but if your fish are skinny don't think it's because of number of feedings and get a little more more aggressive with food amounts.
You may see an algae bloom. However, as long as the tank has proper filtration it will should to the additional nutrients if you stay consistent with heavy feeding whether done multiple times a day or just once.
