Have a 5 stage BRS unit that reads 0 TDS on water coming out of the DI chamber. I can switch it over to what the water is when it’s coming in and it’s usually between 2-3. Is this normal or how can you be sure this is accurate?

Depended on your source water and your ro membrane and pressure and temperature, it is possible for an RO unit to get tds down to <5 before the DI canister :) The best way to test your accuracy is to get a known TDS source (such as TDS calibration fluid), and check it with your meter.
 
Mine def changes and shows up as a value when my filters are depleted. Just have some GHA right now and I’m starting at its roots as I am changing water once a week and haven’t tamed it down much. I don’t overfeed so I’m having a hard time understanding why it’s there.
