I’ve just purchased two chalice corals, currently laying in the sandbed. From what I’ve read these corals need to lay horizontal to plate out but would I be able to angle them up against the rocks so they are not Completly flat?

Orientation (within reason) probably isn't as important as light level. If they're orange/red they don't require a lot of light.

Yeah they are red/orange. So I would be ok leaning them up against a rock instead of laying it flat in the sand
Probably OK, as long as none of it gets buried in the sand, and it doesn't gets moved around by flow, snails, what have you.
