Changing salt questions...

My LFS is out of Instant Ocean. I have been using this exclusively. They have Reef Crysatals, which I was told would be just fine to use.
With my fish now I'm convinced are healthy, addition of two new pieces of live rock and no noticeable change in any parameters except a rise in nitrates which a small water change took care of, I really want to start building "inside" my tank.
Haven't updated my build thread much and am quite frustrated, but I keep reading slow goes it. Aware a ten gallon can crash so fast am unsure of how to go about changing salt.
Very much more experienced customer told me Red Sea, if I really wanted successful stable tank use Red Sea Ocean Pro.
I've extensively, even called Red Sea, looked at the differences.
And found differences. I do not want any more fish. Only coral. Any advice on what to watch for, how to change over, what rate at which to do so appreciated. A change is needed I think because even without coral I do need to maintain small water changes to maintain alkalinity. Everything's telling me this shouldn't be the case.
 
You can have good succees with any of the salts you mention, just watch / test your parameters. Make changes slowly, stability is key.
 
What percentage do you normally change?

Small water changes like 10% the effect on parameters is usually the acceptable changes in alk and cal when switching salts.
 
Would it be correct to assume that nothing should be added also until enough water changes had been completed that I was exclusively using the other salt. Which would be the Ocean Pro, which I'm leaning toward.
