cleaning question

I have an established 32 cube with rock a few years old. My intention is too clean it and kinda start from zero. I drained, filled and drained. Added fresh water and vinegar at a probably too low amount to do anything really good (probably 2 cups of vinegar to 30 gallons of water). I left the rock in the tank while this circulated for a few days. Drained then filled with fresh water and drained again. It's been running with fresh saltwater for a couple of days now.
So the question is how do I know how much residual vinegar is leaching from the rock? Would it matter? Should I remove the rock? Run carbon?

I will be restarting this tank as "new" and cycling it using turbo start and possibly some 2 year old rock from my 125 reef
Any input or suggestions are welcome

Vinegar itself is not poisonous to the tank. Whatever residual will probably be used up as carbon source for your bacterial when you start cycling.

PS: most "bacteria in a bottle" is basically bacteria and vinegar
 
Residual vinegar may affect your ph a bit, but beyond that, you won't have any negative impact. Also, as stated, it will aid in the colonization of your bacterial filter.

if intention of "clean and start from zero" meant complete biological cleanse, then bleach bath would be required. Otherwise any previous undesirable tank/rock bacterial inhabitant will/can survive vinegar cleanse.
