Other than the obvious, baby clown fish showing up, how do you know if a clown fish is a mated pair or just buddies?

I would have to say that's it's the obvious size difference and the amount of time they spend swimming next to each other.

They will display to each other. It looks almost like a seizure for lack of a better explanation. They will orient horizontally and flutter.
The female will be significantly larger.

I had 4 and one died so now the three get along, will it end up just being the largest is female and second largest is male?

Also what is the age they'll be adults?

Sequential hermaphrodites, They're all born male. The largest one will transition to a female. The third clownfish may end up being the odd man out in this situation. How big is the tank?

It's a 125 gal, the three have been together since August 2016 all three hang out together

I want to say mine stated laying eggs around the 2 year mark. I've had them since February 2013. when they lay eggs they become very aggressive towards everything; including my hand.

i've noticed my clowns would do the horizontal display of seizure activity when i first got them. they now have roommates, 2 chromis, and seem to stick closer together, but the tank is only 29g. one of the clowns is definitely noticeably bigger than the other. so guess i'll let you know in two years if they get it on.
