I just got a filefish from my LFS and have him (her?) in my quarantine tank. Does anyone know if these fish tolerate copper? He's hanging out, not showing any signs of illness, but I've had most of my tank wiped out by velvet once in the past, so I don't want to take any chances.

Generally speaking, Filefish do fine in copper. Copper Power is what I recommend. Slowly added, small doses are a good idea. You never know when you might run across a fish that is copper sensitive.
Here's a great link on coppers, TTM, CP recommendations:

Awesome - thanks! I tried doing a search on filefish and copper but totally missed the sticky!

Copper Power is what I have along with the Hanna copper checker. I'll start adding it as soon as I know he's eating well.
