I've heard that with no source of amonia the bacteria starts to die off or something.
Their numbers will decrease but the nitrifying bacterial colony won't entirely vanish, even if you were stop feeding entirely for months.
But you then have to be careful and only introduce new livestock slowly, giving the tank time to readjust between one new addition and the next.
