My new aquarium is almost done cycling and I bought my first corals. I am going to be quarantining fish using Jay's method(https://www.reef2reef.com/threads/current-quarantine-protocol.825055/) so it will be at least 60 days before I can introduce any fish into my DT.

I'm assuming my nitrate and phosphorus will be low until my fish goes into the DT. My plan is to get NeoNitro and NeoPhos.
Question - Do I also need to dose amino acids?

You'll be fine dosing coral-specific stuff - just remember that the suggested amount is based on a full tank of corals, so if you're starting out with a lot fewer corals - adjust the dose amount accordingly.
Got it. Nitrate, Phosphate and Amino Acids should do right? Anything else I need to consider?

A good set of testing kits: Alkalinity, calcium, magnesium, nitrate and phosphate. I like Nyos, Hanna and Red Sea, but many use Salifert as well. Stay away from API if at all possible.

I have Hanna Marine Master kit that I started using. Pretty easy to use.
