So the 10 gallon (really 7) is cycled and I'm figuring out what to put in it. But right now I want to make sure that once I turn the lights on I can keep the uglies in check. I also don't want the inhabitants to starve. I was thinking 2 or 3 snails and maybe a cleaner shrimp. Is this enough, too much, just right? I don't like hermits, they just eat the snails and then turn on each other.

Hey there and welcome ! 1- you are going to get the uglies. No matter what. Welcome it! Couple nass/ fighting conch for you sand. And a couple rock and glass cleaning snails would be a good start. I, this is me, I went with a bonded pair of cleaner shrimp, I like them more than the fish TBH.. so much eye candy. Feed them first though lol. Pigs open up my coral for food otherwise. Good luck!
