Cycle stalled at Nitite N02-please help

Hello,

recently 6weeks ago started a Red Sea 300XL.
30lbs minimal dry rock aquascape
40lbs dry special grade sand
Added bio media chamber to sump with a ton of biological filter media space To compensate for the aquascape.
used Brightwell XLM start and quick cycle as directed.
ammonia went down almost immediately was only able to ever read 1
Nitrite shot up to like 5+ which doesn’t make sense cause I only dosed ammonia once. Fast forward 5weeks and nitrite hasn’t moved. I just did a 10 gallon water change and added Dr Tims because I’ve had success in the past. Four day today there is zero change
Ammonia 0
Nitrite 5+
nitrate 5-10
Alk 6.7
P.H 7.8 or so

Wish I could help - but I don’t know why it would do that. I just wanted to say good luck and that I like your setup.
