During cycle do I have to test or can I just wait about 2 weeks after I’ve started. Also do I need to test nitrites or can I just test ammonia and if none then check if there’s only nitrates
 
Wait the two weeks and test everything. One test could come up as 0 but the other could still be present.

The only way to be sure 100% is to test.

Testing everything in the cycle process makes sure you don’t harm any thing you put into the tank.

My personal opinion would be to test them all just to make sure nothing is spiking and they are all stable parameters before you put your first fish and clean up crew in.
 
No need to test for nitrates until your nitrites are 0 as the test for nitrates needs a zero nitrites reading to get an accurate result.

You can wait 2 weeks but the idea is to see the nitrites peak then you know they are falling, Judy make sure they peak, but yeah testing for ammonia is the important one.
