As far as CUC, what would be a good start?..How much and what variety?

I would recommend going to either liveaquaria.com or reefcleaners.org and looking at their CuC offerings. I would then get a pack that they would recommend for a tank 1/2 the size of the one you actually have. Don't get a CuC until you actually have some algae growth though, you don't want them to starve.
The biggest question is if you want crabs or not. Personally, I find the hermit crabs entertaining but they can eat your snails and corals so some people prefer not to have them.
