How high does my ammonia have to reach before I take out the shrimp I left in there and also do I have to do water changes during my cycle
 
I would wait to remove the shrimp until the entire nitrogen cycle has started (seeing nitrates ) and no water changes during the initial cycling.

So all the level are going to down by there selfs because my ammonia is reading 1.0
 
You should see a spike and fall in ammonia, followed by a spike and fall of nitrite, followed by nitrate slowly rising. The nitrate will not fall, you export nitrate with water changes. Once nitrite is rises and falls to undetectable levels and nitrate starts to rise your tank is considered cycled.

Ok so I’ll just wait for my ammonia to reach 2.0 and pull out my shrimp and then I’ll watch my levels of nitrate and nitrate. Right lol

Your ammonia should reach 0, then you should see a nitrite spike. After that, nitrate.
