So I have a 75 gallon tank filled with dry rock and about 11 pounds of live rock(its from a lfs tank) so I'm wondering how does the cycling work should I add some ammonia and test every other day until it's 0 and nitrite is 0? Or should I just do nothing and just wait like a week and then add one little fish?

Technically, because you already added live rock, the tank is already cycled. However, it wouldn't hurt adding something like fish food to keep the cycle running. I'd give it two weeks, then test water for ammonia and then add your first fish.

11lbs of live rock is enough for one or two small fish, than you can add more gradually when bacteria from live rock will colonize dry rock, which I suppose might take 2-4 weeks or so.
