Hello so I never really thought about this but now I have so this skimmer is the max spec duo both sides can be turned to ever take in more water on continue circulation of it now it also has the ability to adjust the water level within the skimmed by the dial in the front and I have the dc controller to set the power so how would I set the best level of skimming (preferably dry) This is a picture of it and a video

I'll try to help out of i can although I'm not familiar with your specific skimmer.
Looks like your intake is set quite low and needs to be turned up. The object is to get air established in system so the bubbles can do job and attach to nutrients or whatever is in water column out into the skimmate bowl.
It takes a little fine tuning for each skimmer to get right. Sometimes it takes new skimmer a week or 2 to get broken in.
You want a vortex of bubbles in the column of skimmer though.
You can adjust intake down if its skimming too wet. Which would be producing a tea colored skimmate in cup if its set to high.
Or you could run it drier, which produces a more thicker, darker, nastier sludge depending on your needs.
Each skimmer has a reccomended depth they are supposed to be submerged at.
I'd start there and play with intake.
Here's a quick picture of a cpl of my skimmers I run them somewhere in the middle.

Yeah the recommendation for water hight is those little white caps on the side I believe I tuned to good how does this look?

You will need to run it like that and your cup will probably end up filling up fast in next cpl days thats when I dial mine back a bit.

This is max flow now

Try that and see how it does. Just watch it next cpl days and dial it back a little if you have to.

Yes if you can fill the chamber with the vortex of water bubbles do that. I'm not familiar with your skimmer. I set my intake which controls my water level.
You may want to just ride it out now and see what happens
