I hear this term often related to skimmers, and was wondering what exactly dissolved organic and proteins are in our tanks. What happens to these dissolved organics and proteins if they are left to not be skimmer out? Do they become phosphate and ammonia - nitrites - nitrates?

Protein if I recall correctly are chains of amino acids isn't this something people dose from time to time in certain setups?

Organic means any molecule that contains a carbon atom bond
 
Do these organics break down to phosphate and nitrates? Do they breakdown to anything else?
 
Things like dead bacteria and other proteins will break down to phosphate and nitrates. This is why we skim them out.
