My oven is out and I want to make some baked baking soda. Question! Can this be done in the microwave? What do you think the times would be? Will microwaves change any of the properties? I mean all it does is excite water molecules. Correct?
 
I expect it will not work well in a microwave because there isn't available water in it. It may damage the microwave.

Water in a microwave absorbs energy by moving between rotational energy states. The "water" in crystalline sodium bicarbonate is not available to freely rotate as it is part of the bicarbonate ion.
