I can buy a few buckets of salt but probably won't end up using all of them for a long time. Do unopened buckets of salt (Red Sea) last indefinitely?

Unopened should last a very long time. A few years if kept dry from humidity and heat.

Red sea salt is not anhydrous, meaning there is water of crystalization in the salt. When Salts that are not anhydrous are stored for very long periods of time and/or exposed to extreme temp changes (ie storing in your garage in New England) the water crystals in the salt can cause issues. Most salts are not anhydrous. Once most salt mixes are exposed to air, some carbonate minerals will form and you'll lose alkilinity as well. How much depends on exposure.
