Will having a fluctuating nitrate level from day 5 then to 20 then back to 5 for example have a negative effect on coral? Or is it much less important for nitrate to be stable than say calcium and alk

The fluctuation in that range isn't bad in and of itself, particularly if the tank is not mature. The cause may be need to be investigated though.

Hi how old is the tank ?
I dosed nitrates from 5 Bcus I overdosed nopox by accident so to stop it going to zero and giving me dinos again it wasn’t a natural jump

Shouldn't be an issue as long as the Nopox OD doesn't cause a bacterial bloom. Might have been better to test nitrates and add them back as needed to maintain the original level, but no harm, no foul.
