Dosing Vinegar

So I am playing with the idea of carbon dosing with vinegar. A few days ago I tested for nitrites and had it read at 50ppm I did a 10g water change and things came down to about 25-30ppm. I believe the biggest problem was that my skimmer was not dialed in right. The last two weeks I feel as if I have gotten my skimmer dialed in, but I want to try and get my nitrites down to 5-10ppm as I have mainly lps and zoas but would love to add some sps some day. Now for my question, would it be worth dosing vinegar at lower dosages that recommend to try to get my nitrites to between 5-10ppm and maintain it there. I also have cheato in the sump.
 
Excuse me, yes nitrates is what I meant. I do run a mixture of gfo and phosgauard but it is a passive approach as I do not have enough room for a reactor in the sump area.
